Turkey Sausage & Vegetable Bowl

I have been trying to find recipes that I can prep for lunches for my husband and I. I had found this recipe on Pinterest, located at

I wound up changing the recipe and cooking it a little bit differently than what Sweet Peas and Saffron had for theirs, so I thought I would make a post about what I used and how I did it.  I apologize I don't have the ability to create a recipe box (like most food blogs have).  However, I will spare you a long blog post and just get right to what you are looking for anyway!

INGREDIENTS (Made 5 lunches)
1 package of turkey sausage links
2 sweet potatoes -medium to large in size
2 red peppers
1 green pepper
2 zucchinis
1 yellow onion
olive oil
maple syrup

PREPPING INSTRUCTIONS
I usually start by cutting everything before cooking it, so that things don't get burnt.

  1. Cut the sausage links into about 1 inch pieces 
  2. Cut the sweet potatoes into cubes
  3. Cut the peppers into slices, or however you like them cut
  4. Cut the onion into slices, or however you like them cut
  5. Cut the zucchinis into slices and then I cut those slices in half


COOKING INSTRUCTIONS
Now because I do not have a giant pan I decided to use two separate pots to cook this meal. If you have a large one you can do it that way too.

  1. Cook the sausage on medium heat for about 10 minutes, until cooked through.
  2. Set the sausage aside in a bowl
  3. Using the same pot or pan you cooked the sausage in still on medium heat, add the peppers and onions and coat them with oil (I put a lid on the pot, but it is not required). 
  4. In another pot or pan, on medium heat, put the zucchini and sweet potatoes in and coat them with oil as well (I also used a lid here).
  5. Let everything cook, stirring about every 4 to 5 minutes; in total for about 20 minutes or until sweet potatoes are fork soft and peppers and onions are soft.
  6. Add everything to one bowl and mix together.
  7. Drizzle maple syrup on the top and mix everything together again.


and WA-LA! I portioned out enough meals for the rest of the week for my husband and I, which gave me 5 meals. However you can portion it out however you want or even make and eat this for dinner! This recipe was very satisfying. My husband tells me it would be even better with some ranch. He puts ranch on everything I swear!

The Internet can be a glorious thing. We have instant access to so much information it makes my head spin sometimes. I was just sitting here trying to remember a time when I did not have the Internet. Even more so, a time when social media did not exist. The only way to interact with people was to talk to them in person, or if you were lucky, you could talk to them on the phone. I spent many hours using telephones when I was younger. I remember using the land line at my house to talk to my friends when we weren't at school. Once cell phones came out and I was finally allowed to have one I remember having to wait until after 7pm to make phone calls because it was free minutes. Data did not exist. Texting was not common at all because it cost extra. Cell phones did not have cameras on them quite yet.

I have had enough of the belittling of stay at home parents

You know, I have had quite enough of people telling me that I am "just" a stay at home mom. That it is my "job". That I am lesser because I do not get a pay check.

I am sick of being told that my husband is entitled to all the sleep he wants because he has to be up for work everyday. Apparently I am just expected to function as a zombie everyday with a big smile on my face and showcasing brilliant patience.

I am tired.

On average, I spend about 18 hours a day being a single parent. Meaning, I am the sole caretaker of my children's physical and mental health until my husband gets home from work. Usually he is home by 4pm and then he will shower and get his lunch ready for the next day. I will make dinner, often times while still tending to the baby. After dinner, I am usually on clean up patrol. Meaning clean up the table and clean up the children. After bath time, we usually congregate in our room on the bed.
